This unique process is 20-30 times colder than “cold-pressed” olive oils. The result is a dramatically different olive oil, both from a taste and nutritional standpoint. Early-Harvested Koroneiki Olives So many factors influence the quality of the olives and thereby the resulting quality of the final olive oil. Geographical location, farming methods, time of harvest and of course every stage of the processing are all elements that come into play when creating the world's most premium olive oil. The olive groves are located in Soulinari, a pristine village in the Peloponnesian region of Greece, just miles away from the famous birthplace of the Koroneiki olive variety. At an altitude of 300m above sea level, the soil conditions are optimal for growing the most beautiful, luscious olives.
